New York Baked cheesecake
Ingredients:
❖ Crust:
1) 7 oz oreo - 200 grams
2) 1 Tbsp sugar
3) 5 Tbsp melted butter
❖ Cheesecake layer:
1. 250 grams cream cheese
2. ½ cup heavy cream
3. 5 tbsp flour
4. Vanilla essence
5. 1 cup granulated sugar + ½ cup brown sugar
6. Salt 1 pinch
7. Eggs –4
Method:
1. Blitz the Oreo's with 5 tbsp butter and 1 tbsp sugar
2. In a springform cake tin (lined with baking/parchment paper), lay the crust and pat down with the back of a smooth cup , to lay it flat and even
3. Bake the crust at 180C for 10 mins. [Let it cool]
4. For the cream cheese layer: Whip the cheese and sugars until light and fluffy
5. Add vanilla essence according to taste
6. Add 5 Tbsp of flour one after the other
7. Add pinch of salt after the flour is dissolved
8. Finally add 4 eggs one after the other, DO NOT OVER MIX AS THE BATTER MAY CURDLE.
9. Cover the bottom of the cake tin with foil and prepare hot water bath by the placing the cake tin in a slightly deeper vessel (which can be used for baking as it will go with the cheesecake) and fill the deeper vessel with water up to 1 inch.
10.Pour the above batter on the crust and bake at 180C for 1 hr. and rest in the oven for 30 mins after the baking process.
11.Rest in the fridge overnight.
